Grilled brioche bread, whipped chicken liver pâté, green apple with Rovo honey from Clerici Beekeeping, fried sage

Tortellini in capon broth from our farms, Parmigiano Reggiano from VaccheRosse aged over 30 months

SECOND
Bettolina boiled meat
(Cappello del prete, cotechino, veal tongue, roast, capon)

ACCOMPANIED BY 
Green sauce, Voghera mustard, honey mustard

SHARED SIDE DISHES
Baby spinach with butter, sautéed mushrooms, warm potato salad

PRE-DESSERT
Small tasting of cheeses selected from local farms accompanied by our homemade jam

Bergamot sorbet, extra virgin olive oil, borage flowers
